1 1/2 cups gluten-free all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup mashed ripe bananas (about 2 medium)
1/2 cup plain Greek yogurt
1/2 cup chopped walnuts (optional)
Preheat the oven to 350°F. Grease a 9x5 inch loaf pan and set aside.
In a medium mixing bowl, combine gluten-free all-purpose flour, baking powder, baking soda, and salt.
In a large mixing bowl, cream together butter and sugar until light and fluffy.
Add the eggs to the butter mixture one at a time, beating well after each addition.
