Diabetic-Friendly Chickpea Flour Veggie Fritters
Ingredients:
1 cup chickpea flour
1/2 tsp salt
1 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp chili powder
1/2 tsp garam masala
1/2 cup water
2 cups grated vegetables (such as zucchini, carrots, and sweet potatoes)
2 tbsp chopped fresh cilantro
2 tbsp olive oil
Instructions:
In a large mixing bowl, whisk together the chickpea flour, salt, cumin powder, coriander powder, turmeric powder, chili powder, garam masala, water, grated vegetables, and cilantro.
Heat the olive oil in a large non-stick frying pan over medium heat.
Scoop heaping tablespoons of the batter into the pan and flatten slightly to form a fritter.
Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
Serve the fritters hot with a side salad or chutney of your choice. Enjoy!
